Welcome to the part 3 of Simple Steps to Self-Care with Heidi.


Over the last two weeks, I've shared simple steps, and foods that you can incorporate into your life to help support your immune system. Today I'll share a few of my family favorites to get your started.



Chicken Soup A family tradition

Serves: 6


Ingredients

2 TBSPs grass-fed butter 1 tsp parsley

1 onion, diced 1 1/2 tsp thyme

2 cloves, minced garlic 1 1/2 tsp oregano

3 celery stalks, chopped 8 ounces, uncooked organic egg noodles

3 carrots, chopped

2 organic chicken breasts, diced sea salt and black pepper to taste

8 cups chicken bone broth


Directions

Sauté butter, onion garlic and celery in grass-fed butter


Add chicken, bone broth, and spices, bring to a boil, then reduce heat to low and let simmer until chicken is fully cooked, 30 minutes or more


Salt and pepper to taste and your ready to go!


Organic, gluten free dinner rolls are an excellent compliment to this dish!


(not an egg noodle fan? Swap out egg noodles for an organic blend brown rice instead)



Bun-less Cilantro Sliders A regular in my home

Serves :8




Ingredients

1 onion 2 tbsp coconut oil

1 tsp sea salt 1 cup fresh, chopped spinach

1/4 cup coconut milk 1/2 cup diced celery

2 cloves minced garlic 1/2 cup chopped cilantro

1 lb grass fed beef 2 eggs

1 tsp coriander 1 1/2 tsp cumin

1/2 tsp cayenne pepper (optional)

1 tsp black pepper

8 lettuce leaves of choice

tomato slices as garnish


Directions

Combine all ingredients into large bowl and mix thoroughly.


Shape meat mixture into small, slider sized patties


Heat coconut oil in skillet over medium heat... use caution not to overheat and reduce heat if necessary.


Brown patties, 4-5 minutes per side, being careful not to burn.


Serve warm, wrapped in lettuce leaves and topped with fresh tomato.





Baked Carrot Fries: A family staple

Serves :6




Ingredients

3 lbs fresh, organic carrots

3 tblsp olive oil

3 tsp sea salt

1 1/2 tsp pepper

1 1/2 tsp garlic powder

1 1/2 tsp thyme


Directions

Wash, peel and cut carrots to preferred size


Place carrots into large bowl


Drizzle with olive oil


sprinkle spices on top and stir to evenly coat.


Place carrots on cookie sheet, and bake for 25-35 minutes at 400 degrees.


Cooking tip: Flip halfway through for an even bake


Allow to cook for a few minutes and enjoy!
